The grapes used are 100% Melon de Bourgogne, grown on sandy and clay-siliceous soils with deep layers of micaschist. After a mechanical harvest at the optimal point of maturity, the must undergoes pneumatic pressing and cold static decantation. Subsequently, it is transferred by gravity to underground glass tanks, typical of the Nantes area. Alcoholic fermentation occurs in a controlled manner at 16 °-17 °C and the wine matures on fine lees for at least 30 months, exceeding the minimum required of 18 months.
