
Acquacotta is the typical dish of the cowboys, the horse shepherds typical of the lower Maremma, of the Viterbo Tuscia and of the Pontine Agro. A poor dish that the cowboys took with them during their working days. It contains diced vegetables of varying types depending on what the season offered. Sometimes, to give a bit of strength to the acquacotta, given the hard work of following the herds, pork rinds or Cinta Senese bacon or pig were added. The cowboys ate it with pieces of dark bread and extra virgin olive oil.
