The Happy Rising White Flowering Tea is a flowering tea handmade in Fujian Province using Mao Feng white tea and globe amaranth flowers. The small tea sphere slowly opens during brewing, unfolding on the bottom of the teapot and revealing the vivid globe amaranth flower at its center, which seems to float in the water. The result is a delicate and fragrant infusion, characterized by pleasant sweetness and fresh floral and vegetal notes. In addition to its aromatic profile, Happy Rising also allows you to appreciate the spectacular aspect of the artisanal processing, watching the bouquet gradually open during brewing. Appearance and aroma The tea leaves comprising Happy Rising flowering tea, in various shades of green and silvery white due to the numerous buds covered with bai hao, are closed into a sphere around the globe amaranth flower, with its numerous small bright-pink petals. Once infused in water, the flower and leaves open, releasing a delicate, fresh vegetal aroma, sweet honey notes and slightly fruity notes reminiscent of wildflowers. The liquor in the cup is a beautiful color between gold and pink, clear and luminous. Tasting notes On the palate, Happy Rising flower tea is gentle and balanced: it has sweet notes of honey and beeswax, followed by scents of yellow flowers and notes of underripe pear. There is even a very slight leather note, almost reminiscent of an extremely delicate sheng puer. On the finish, very light vegetal notes of spring vegetables such as fresh broad beans can be detected, lingering softly. The body is light and silky, without bitterness and with barely perceptible astringency. Place of origin Fujian Province, China. Production The tea buds, expertly processed and joined together at the base to embrace the globe amaranth flower at the center, are made according to the white tea production process. After harvesting, the fresh globe amaranth flowers are dehydrated, either naturally in the air or with special machines. The flower must be picked whole and at the best point in its harvesting period to benefit from maximum aromatic intensity. Brewing method To enjoy the full beauty of the infusion and the opening of this flower tea, we recommend using a transparent glass cup, preferably a teapot. Rinse the cup with hot water. Use only one piece per cup. Steep the tea leaves in hot water at 80°C to 85°C for 1 minute for the first and second infusions. Gradually increase the time and temperature for subsequent infusions. Storage: store Happy Rising flower tea in a cool, dry and dark place.
