Happy Rising white flower tea is a blooming tea handcrafted in Fujian Province using Mao Feng white tea and globe amaranth flowers. The small tea sphere slowly opens during infusion, unfolding at the bottom of the teapot and revealing the lively globe amaranth flower at its centre, which seems to float in the water. The result is a delicate, fragrant infusion with pleasant sweetness and fresh floral and vegetal notes. In addition to its aromatic profile, Happy Rising also showcases the artistry of its handcrafted production, as the bouquet gradually opens during infusion. Appearance and aroma: the tea leaves forming Happy Rising blooming tea, in various shades of green and silvery white due to the many buds covered in bai hao, close into a sphere around the globe amaranth flower, whose many small petals are bright pink. Once infused in water, the flower and leaves open, releasing a delicate, fresh vegetal aroma, sweet honey notes and slightly fruity notes reminiscent of wildflowers. The liquor in the cup is a beautiful clear golden-pink colour with luminous reflections. Tasting notes: on the palate, Happy Rising flower tea is gentle and balanced, with sweet notes of honey and beeswax, followed by hints of yellow flowers and notes of underripe pear. There is even a very slight leather note, almost reminiscent of an extremely delicate puer sheng. On the finish, very light vegetal notes of spring vegetables such as fresh broad beans can be detected; these notes linger softly. The body is light and silky, without bitterness and with barely perceptible astringency. Place of origin: Fujian Province, China. Production: the tea buds, skilfully worked and joined at the base to embrace the globe amaranth flower in the centre, are made according to the white tea production process. After harvesting, the fresh globe amaranth flowers are dehydrated, either naturally in the air or using special machines. The flower must be picked whole and at the best time of harvest to achieve maximum aromatic intensity. Infusion method: to enjoy the full beauty of the infusion and the opening of this flower tea, we recommend using a transparent glass cup, preferably a teapot. Rinse the cup with hot water. Use only one piece per cup. Steep the tea leaves in hot water at 80–85 °C for 1 minute for the first and second infusions. Gradually increase the time and temperature for subsequent infusions. Storage: store Happy Rising flower tea in a cool, dry and dark place.
