Combine the eggs with the sugar until light and frothy
Gradually add the oil, water, lemon, flour, and cinnamon
Finally add the peeled and chopped apples. Bake for 45 minutes
Caramel: melt the sugar over low heat in a fairly large saucepan with a double bottom WITHOUT stirring
Once it has melted enough, swirl the pan and then stir to incorporate the last solid pieces. Add the butter cut into cubes (it must be at room temperature)
At first it seems to be burning, then it comes together; finally, with the heat off, add the cream and turn the flame back on
Let it thicken slightly, then transfer to a container where it will set once cold
