Maturation takes place with an initial passage in stainless steel containers for about 5/6 months, and then a subsequent passage in barrique for another 9 months. Refinement is then done in the bottle for about 5/6 months. The color is carmine red with clear garnet reflections. On the nose, fruity, floral, herbal, and spicy notes are perceived, with hints of cherries in spirits and berries, wilted violet flowers, pine, and balsamic effluvia, finally notes of licorice and rhubarb. On the palate, it is dry, warm, moderately fresh and tannic, balanced, intense, persistent, and harmonious, with the same aromas as perceived on the nose. A wine capable of demonstrating all the strength, character, and territoriality of the island. Recommended pairing with grilled meats, cuts, herb-roasted lamb, game, and aged cheeses.
