Produced in limited quantities, the selected hand-harvested grapes undergo a special winemaking method. Grape varieties: 100% Sauvignon. Vineyard: the grapes come exclusively from selected parcels in the Appiano Monte area. The soils are gravelly with calcareous content. Training system: Guyot. Harvest: mid-September. Winemaking: 3 days of cold maceration and soft pressing. Fermentation and aging in barrique/tonneau. After the first year, further passage on the lees for a total of 18 months in a steel tank. Alcohol content: 14% vol.
