The Black Label Colli della Toscana Centrale IGT 2017 from the I Balzini winery is a red wine with unforgettable aromas that stir the emotions, also excellent at the end of a meal. Grape varieties: Cabernet Sauvignon and Merlot. Vineyard: Pliocene-origin soil, a sedimentary formation characterized by the presence of yellow sands alternating with clays. The presence of marine fossils is notable. Cultivation system: Soil cultivation alternating with grassing and spur-pruned cordon training. Bunch thinning during growth and final selection at harvest; at harvest, the bunches are hand-picked, placed in small crates and selected again on the conveyor belt. Winemaking: Maceration in steel vats at a controlled temperature of 26–28°C for approximately 2 weeks. Malolactic fermentation completed. Aging: In medium-toast French oak barriques, 50% of which are new, for approximately 12 months, followed by bottle refinement for at least 18 months. Year: 2017 Alcohol percentage: 14% vol.
