Grape varieties: Sangiovese, Cabernet Sauvignon. Vineyard: soil of Pliocene origin, a sedimentary formation characterized by the presence of yellow sands alternating with clay. Notable presence of marine fossils. Cultivation system: soil working alternated with grass cover and spur-pruned vine training. Cluster thinning during growth and final selection at harvest; during the harvest the bunches are hand-picked, placed in small crates and selected again on the conveyor belt. Winemaking: maceration in steel vats at controlled temperature of 26-28 °C for about 2 weeks. Malolactic fermentation completed. Aging: in medium-toasted French oak barriques, 50% of which are new, for about 12 months, followed by finishing in bottle for at least 18 months.
