
The Fosso del Tiglio Aglianico del Vulture DOC 2020 from Cantine Strapellum is a generous wine like Basilicata. Grapes: Obtained from meticulously selected Aglianico del Vulture grapes harvested by hand. Production Area: Vineyards owned located at the foot of Vulture. Fosso del Tiglio - Venosa. Winemaking: The freshly harvested grape arrives at the winery and is quickly destemmed and pressed to extract from the skin and outer part of the berry only the noblest and most aromatic fractions. Fermentation, at controlled temperature, takes place in refrigerated steel tanks. Maceration lasts 20-25 days, during which periodic pump-overs are carried out to allow the must to appropriate all the trace elements present in the skins and to gently extract the coloring material. The racking occurs only when all the sugar has been transformed into alcohol. It is transferred to thermally insulated steel tanks, thus maintaining a post-fermentation temperature of about 22°C for a long time. In this way, malolactic fermentation starts and ends spontaneously in the following two months. Aging: All the wine is left to rest for 9 months in 225l French Oak barrels, medium toasted. The remaining 3 months age in steel tanks. It completes its aging in fine bottles for at least 6 months. Alcohol Content: 13.5% Vol. Vintage: 2020.
