
Cherry wine is one of the typical products of the Marche region and in particular of Montefeltro. The product, already mentioned by the biographer of Duke Federico II da Montefeltro, is obtained from the fermentation of sour cherries with sugar. Sour cherries are a very ancient variety of wild black cherry, characterized by an intense flavor, not too sweet, with an intriguing almond-like aftertaste that creates a pleasant fresh and tart sensation. The ingredients are placed inside closed containers for fermentation at a controlled temperature and then, subsequently, the previous year's wine is added. The resulting mixture is left to rest for at least four years before bottling. This is how the inimitable cherry wine of Podere Casella Muzighin is born! The cherry wine obtained is clear, dense, deep ruby red in color, with a very intense aroma of sour cherry in spirits. Mineral notes of graphite, chocolate and rosehip are then perceived. On the palate it is sweet, warm, soft, with great freshness and good tannin. The finish reveals a pleasant note of amaretto di Saronno. The name could not fail to recall the inspirer and the one who has always produced cherry wine for the family, namely Serafino Pizzoni. With the addition of the initial article "il Serafino" it becomes a name that on its own makes one imagine the sensations experienced when tasting the product: sensations of warm serenity and pleasantness.
