A Classic Method that has been left to ferment on the yeasts for 36 months: three years of quiet for the wine left on the stacks to mature together with its own yeasts. A wine that comes from a very particular area of the province of Verona: that of the ancient volcano of Calvarina, the largest extinct volcano of the Eocene throughout the Alpine foothills. A harsh land but at the same time rich in minerals that offer the wine great and complex aromatic sensations. The significant time of fermentation has enhanced its complexity characteristics and above all softened its exuberant typical traits. The wine used to produce this sparkling comes from fermentation both in steel and aging in oak barrels. All phases of production are manual, including the remuage sur pupitres.
