Taccorosso is a pure Negroamaro obtained from the oldest vineyards of Cantina Paolo Leo, between the provinces of Taranto and Brindisi. The ancient bush vines produce very low yields of great quality. The concentration of the fruit, during ripening, explodes in the glasses giving a wine of precious structure and body. To obtain such a complex wine, the harvest occurs manually in the early hours of the morning, paying great attention to the clusters. After harvesting, the grapes undergo destemming and the must is left to macerate, in contact with the skins, for 12-15 days, fermenting at a controlled temperature of 25°C. It is then aged for 3 months in stainless steel tank, 10 months in tonneaux and 3 months in bottle. With a ruby red color and elegant garnet hues, on the nose this Negroamaro proves to be particularly complex, with hints of berries, myrtle, and juniper. Teasing spices recall licorice, coffee, and Mediterranean herbs. On the palate, it offers fascinating tannins. Soft and velvety, it offers a sensational taste-olfactory harmony.
