
This extraordinary Il Conio Vin Santo del Chianti DOC from Campo di Monte is obtained from Malvasia bianca lunga del Chianti, dried for 4 months and matured, depending on the harvest, for about 8 years in barrels of various types of wood and one year of aging in bottles. It has an amber color with violet reflections and an intense aroma of dried fruit and ripe yellow-fleshed fruits with fairly spicy notes. On the palate, it is warm, fruity, spicy with a predominance of white pepper notes and a delicately fruity persistence. Soil Composition: loamy soil free of skeleton, predominantly exposed north/south, on the hills of Valdarno di Sopra at an average height of 295 meters above sea level. Vineyard: low spur cordon training system with 5000 vines per hectare. Quality of the grapes: Malvasia Bianca Lunga, also known as Malvasia del Chianti and in the 1500s as Malvasia Bianca di Montegonzi. The rootstock is SO4. Sixty hectoliters are produced per hectare. Harvest: the harvest is manual, generally carried out in the second decade of September. The picking occurs in the early afternoon during the hottest hours. Each bunch of Malvasia is selected for its intrinsic quality with its own company methodology. Vinification: the grapes are placed for several months on mats in the cellar and, depending on the vintages, hung in bunches. At the end of natural drying, they are pressed. The obtained must is put into Tuscan barrels, produced with higher wood quality, which serve to slowly transfer their distinct aromatic essences. At this stage, the 'mother of the family' is added, a concentrate received as an inheritance and made from a 'blend' aged three generations and renewed with each 'scaratellatura'. The forced fermentation lasts between 6 and 8 years. The use of the 'mother of the family' makes this wine certainly unique and characteristically representative of the estate.
