Already with the second infusion, the body becomes denser, and we find notes of leather and almost camphor. These hints remain even in the third infusion and the subsequent ones: the notes of leather become more intense and the hints of humus and sweetness, enveloping the palate and lingering. FOR THE WESTERNER The first sip of Shu Puer Wu Liang Legend 2021 tea has as its first distinctive note that of wild fennel, followed by marked sweetness with slight hints of anise. The notes of undergrowth arrive later, with hints of damp wood and wet earth. After a quick rinse of the leaves in water at 100°C, you can proceed with a first infusion of 10 seconds and, keeping the water at the same temperature, continue with many infusions increasing the time each time by 5 seconds (10 – 15 – 20 …). This tea has a longevity of about 5 infusions. For a classic preparation according to the Western style, we recommend 2 grams of leaves (about 1 teaspoon) in a 150 ml cup with water at 100°C for an infusion time of one and a half minutes.
