From this area at the far southern part of Yunnan, in the province of Xishuangbanna, many high-quality puer teas originate due to the excellent raw materials of the territory and the large presence of skilled and experienced tea artisans. The infusion has a quite rich flavor profile that already shows some signs of maturation due to the age of the product. The sweetness of this puer, in fact, does not have fruity notes but rather suggests a more savory taste similar to that of rice or starchy foods. In addition to this aspect, the tea also displays somewhat more refined flavors such as a slight bitterness similar to that found in artichokes and a mineral note with balsamic character in the aftertaste. Production: After harvesting, the tea leaves are left to wither in the sun for a certain time depending on the producer, before moving on to the "kill green" phase, similar to that used for producing green teas. The peculiarity, in this case, lies in not heating the leaves as much as is done for a green tea, in order to preserve some enzymes capable of altering the flavors over time. Once cooked, the leaves are left to rest overnight before concluding their sun drying. At this stage, the product is called maocha and is ready to be possibly pressed, thus obtaining the best conditions for transport and aging. To press the leaves, they are passed for a few seconds through a strong jet of steam to soften them externally, and subsequently collected in a stocking or bag that will give a shape, usually disc-like, to the product. To ensure that this structure remains stable over time, the bag is left for hours under a stone or mechanical press while the leaves lose the residual moisture taken from the steam in the previous stage. Following this preparation, with 5.5 grams of leaves, multiple infusions can be made to best experience all the flavors of the tea. After a quick rinsing of the leaves with water at 100°C, a first infusion of 10 seconds can be made, and subsequently, keeping the water at the same temperature, the product can continue to be used by adding more water and increasing the infusion time by about 5 seconds from the previous infusion (10 - 15 - 20…). For a more traditional preparation according to Western style, we recommend 3 grams of leaves (about 2 teaspoons) in a 150 ml cup with water at 100°C for an infusion time of one and a half minutes. For a better tasting experience, we suggest filtering the infusion as soon as the established steeping time is completed. The infusion times we suggest can also be slightly modified according to personal preference to achieve a more or less intense taste.
