
This brick of Tè Puer Sheng (raw) Yi Wu Old Tree is made from leaves collected from the ancient tea trees on Yiwu mountain, Yunnan, renowned for its unique broad-leafed tea trees in the world. The leaf has a slightly smoky aroma, with a flavor that starts off fresher and herbaceous, soon transforming into a sweet aftertaste. The leaf is fully fermented, after a long maturation period that gives complexity to the brew. Place of origin: Yiwu, Yunnan, China. Preparation: we strongly recommend brewing the raw Tè Puer Sheng Yi Wu Old Tree using the traditional Chinese method (Gong Fu Cha) with a gaiwan that holds about 150 ml. Following this preparation, with 5 grams of leaves, you can make multiple infusions that capture all the nuances of flavor of the tea. Heat the water to a temperature of 90°C: proceed with a brief rinse of the leaves and then make the first infusion for 20 seconds. Keeping the water at the same temperature, you can continue to use the same leaves by adding more water and increasing the infusion time by 10 seconds each time (20 – 30 – 40…). This tea has a longevity of about 6 infusions. For a more classic preparation in the western style, we recommend 2.5 grams of leaves in a 200 ml cup with water at 90°C for an infusion time of 2-3 minutes. For a better tasting experience, we suggest filtering the tea as soon as the infusion time is completed. The infusion times we have suggested can be slightly modified to your liking in order to achieve a more or less intense flavor. It is advised to store in a cool and dry place away from direct sunlight.
