Place the duck breast in a baking dish with a few knobs of butter on top, salt and pepper.
Cook for 15 minutes at 200 degrees in a static oven; the skin should be nicely browned.
Peel the pineapple, slice it and cut cubes from each slice.
Cut part of the pineapple slices into pieces and add them to the baking dish together with the meat. They will become part of the cooking juices.
Remove the duck from the oven, place it on a tray and pour the cooking juices over it. Garnish with pineapple cubes and a few fresh mint leaves.
