Mix the milk, flour, salt and egg yolks until you obtain a smooth batter; fold in the beaten egg whites with the sugar.
Heat part of the butter in a pan, pour in the batter, scatter the raisins on top and fry slowly; turn everything over and finish cooking in the oven.
At this point break the pancake into pieces with a fork, aiming for irregular pieces about 3 to 4 cm each; add the remaining butter and toss everything.
Dust with powdered sugar and serve together with cooked plums.
