Sift 400 g of flour into a bowl.
Dissolve the brewer's yeast in a few spoonfuls of lukewarm water, a little sugar, and a pinch of salt.
Mix the ingredients and pour the mixture onto the flour, kneading everything until you obtain a firm dough.
Score the dough with two cross cuts and let it rise for about two hours.
Put the eggs in a bowl with the rest of the flour.
Then add the risen dough and knead all the ingredients together, obtaining a smooth dough to which you will add the softened butter at room temperature.
Work on a pastry board until the sticky mixture has turned into a smooth ball.
Let it rise for about 30 minutes.
Roll out the dough with a rolling pin and cut out triangles, placing a teaspoon of Nutella in the center of each one.
Then roll the triangles up on themselves, folding the tips to obtain croissants.
Brush them with a little egg yolk and bake them in a preheated oven at 200 degrees for about 25 minutes.
Dust with unsweetened cocoa and serve!
