Sancocho De Gallina is a tasty traditional Colombian soup made with free-range hen, ripe tomatoes, platanos bananas, cassava tubers, potatoes and fresh coriander. It is a rich and hearty dish, perfect for warming the soul during cold winter days.



Arrange the cleaned, washed hen cut into pieces and let it marinate for 2 hours with half of the onions and tomatoes
Sauté the remaining half in a clay pot together with the margarine and the chopped garlic
After about 5 minutes, when the sauté has taken on color, pour in the water and bring to a boil
At this point add the meat, the corn cobs and the platanos
When the meat starts to become cooked, after about 45 minutes, remove the corn cobs and set them aside
Now add the red bananas, cassava and potatoes to the cooking broth and season with salt and pepper
Cover and continue cooking until all the ingredients are well cooked; at this point, shell the corn kernels into the broth and sprinkle with fresh coriander before serving at the table
