Scrape and wash the mussels, then let them open over high heat in a large pan with 1/2 glass of wine, a clove of garlic and chopped parsley.
Set the mussels aside and strain their cooking liquid.
Brown the sliced onion and the chopped garlic clove in a large pan with 4 tablespoons of oil.
Add the cleaned and cut squid and let them flavor for a few minutes.
Add the blanched, peeled and diced tomatoes.
Let everything simmer for 5 minutes, then add the saffron diluted in 3 ladles of hot broth.
Add the mussel cooking liquid, the rice and the peas, mix well, cook for 15 minutes, then add the shrimp.
Finish cooking, adding more broth if needed.
At the end of cooking, add the mussels to the paella and garnish with a few shrimp left whole and lemon wedges.
