
Rose hip marmalade is a delicious sweet preserve made with rose hips. It is a very popular traditional recipe, especially in Italy. First, go out and pick the rose hips when they are well ripe
Wash and clean the fruits, trying to discard as many seeds as possible (and as little pulp as possible...)
From 1 kilo of fruit you will end up with 250 g between skins and pulp and another 100 g of seeds that you could not remove
Add 1/2 glass of water and place over fairly low heat
Let it cook for half an hour, then pass everything through a sieve, finally removing the seeds
The result is remarkably similar to tomato purée
Put it back on the heat and add another half glass of water and 350 g of sugar (remember that rose hip is rather tart)
Let it cook for another half hour, stirring, then let it cool and put it into jars
