Pick the rose hip berries when they are so ripe that they come off the branch easily, and gather plenty because each berry contains very little pulp
Clean them and remove the black dot at one end, which is nothing more than the remains of the flower (that is, the rose)
At this point, have fun running the berries through a food mill to remove skins and seeds, collecting the pulp
Weigh the pulp obtained and add an equal weight of honey (I recommend acacia honey or a mixed-flower honey, but in any case a fluid one that is not too aromatic)
Your preserve is ready; pour it into containers and enjoy it
Keep in mind that, since it is not cooked, it still contains all its vitamin C
