Sicilian cannoli are typical sweets of Sicilian tradition. They consist of a crunchy and crumbly shell, filled with a delicious ricotta, sugar and chocolate cream. Cannoli are a triumph of flavors and a true delight for the palate. They are usually eaten during the Christmas holidays in Sicily, but they are excellent any time of the year.
Put the flour on the pastry board and knead it with the other ingredients for the shells for 1/2 hour.
Then roll out the dough with a rolling pin until you obtain a very thin sheet; cut it into oval shapes that will be wrapped around pieces of cane; fry them in plenty of lard or oil.
It is advisable to grease the canes before using them and glue the edges of the dough shapes together with a little egg white.
After filling the cannoli with ricotta mixed with sugar, vanilla and brandy, cover the ends with chocolate shavings.
Finally, sprinkle with powdered sugar.
