Clean the fish by removing the head and bones carefully so as not to break them
Wash and dry them
Pit the washed olives and squeeze the capers, peel the tomatoes, remove the seeds and chop everything together with two cloves of garlic and a tablespoon of parsley
Mix the chopped mixture with the pecorino and stuff the sardines, which you will place in a baking dish greased with oil
Add salt, pepper and oil, then cook them in a hot oven for about 20 minutes
