Soak the spelt and the beans separately overnight
In a pot, sauté the chopped onion, carrot, celery and garlic in two tablespoons of oil
Splash with the wine and let it evaporate; add the tomatoes and two sage leaves, cook for fifteen minutes, then add the beans and one liter of water and cook for one hour
Blend everything
Pour into a pot, bring to a boil, season with salt and pepper; add the spelt and let simmer for an hour and a half
Dress with a drizzle of oil
