Ugly But Good Cookies are a delicious and traditional Italian specialty. The quantities are for 20 cookies
Toast and finely chop the hazelnuts
Whip the egg whites until stiff peaks form and gradually incorporate the chopped hazelnuts, sugar, and just a pinch of vanilla
Put the mixture in a non-stick pan and cook over low heat for about half an hour, stirring constantly with a wooden spoon
Remove from the heat and spoon the mixture, fairly far apart, onto a well-buttered and floured baking tray
Bake in a preheated oven at 170 degrees for about 40 minutes, avoiding opening the door
Remove, let cool, and detach the cookies with a spatula
