Boil the potatoes, then peel them while still hot and mash them through a potato ricer
Mix into the purée the diced cheese, sliced spring onions, chopped fennel fronds, beaten egg and a splash of lemon juice
Add salt lightly and mix well
Shape into small patties, coat them in flour and fry them in oil
Drain them when nicely golden and serve hot
