Whip the egg whites until stiff peaks form in a bowl and set them aside.
In another bowl, work the egg yolks with the sugar.
Add the pistachio cream and keep mixing.
Fold in the whipped egg whites a little at a time, mixing gently so as not to deflate the mixture.
Add the sifted corn starch and mix gently until you get a smooth and homogeneous batter.
Transfer the batter to a buttered and floured 18/20 cm pan.
Bake in a preheated static oven at 180º for 20-25 minutes.
Remove from the oven and serve as desired.
