Unroll the puff pastry and cut it with a pastry wheel, first making two central cuts to form a cross. Then divide each wedge in two and then each wedge in two again, obtaining 16 pieces.
Roll up each wedge starting from the outside toward the center.
Using the same baking paper as the puff pastry, lift it and move the croissants onto a baking tray.
Brush them with the beaten egg and cover with sesame seeds.
Bake in a preheated fan oven at 200 degrees for 10 minutes (or in any case until they are golden on the surface).
Let the croissants cool, cut them in half and fill them with cured meats, cheeses and lettuce as you like.

Filled puff pastry croissants are excellent served with white wine or prosecco. You can store the croissants in the refrigerator for up to two days, but they are best when freshly made. You can vary the filling with ingredients of your choice, such as cooked ham, mozzarella, tomatoes, tuna, mayonnaise, hard-boiled eggs, and more.
