
The Bagoss d'alpeggio aged 24 months Slow Food Presidio is a mountain cheese made from raw milk obtained from Brown cows produced only in 28 small businesses within the Bagolino area, in the Brescia mountains. It is a true jewel, yellow like gold: this is because saffron is present in the paste. A cheese full of emotions: the milk from the Brown cow is rich in fats and proteins, increasing the yield in cheesemaking (up to one kilogram more for every 100 liters of milk). These cows graze in one of the 22 pastures recognized in the Bagolino area and are fed with local hay. Curiosity: The Bagòss is a cheese that strongly identifies with the area in which it is produced, also because, to obtain the production mark, it must be made exclusively within the Bagolino area. Its name embodies a deep spirit of attachment to the region, as it derives from the name of the inhabitants of Bagolino, Bagossi.
