
Crudo Alpino comes from a piece of pork loin that is aged and smoked in stone caves in the mountains with typical high-altitude aromatic herbs such as arnica, juniper berries, motherwort, and other rarities that are particularly found in the Lessini Mountains, rich in flowers. The loin is tied while still fresh and coated with spices and herbs. It is then left to naturally smoke from the slow burning of branches and juniper berries. The aging process lasts for 6-8 months. At the end, after partial trimming, it is packaged.
