With the two wines and their pomace, it is aged on cow's milk cheese, produced with the same technique as the Monte Veronese DOP. It has a maturing period of 8 to 19 months. The aging in pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, giving it typical organoleptic characteristics.
