Garganega for the Soave is a typical indigenous grape of the Verona area, the most well-known and widely cultivated. With the two wines and their pomaces, it is used to age the cow's milk cheese produced using the same technique as Monte Veronese DOP. It has a maturation period of 8 to 19 months. The aging in the pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.
