Shropshire Blu is a British cheese, more precisely Scottish, and is one of the rare and delicious cases in which our website looks beyond Italy. An exceptional cheese! Made with pasteurized cow's milk, it is soft, with a distinctive and very pleasant taste. This cheese has a hard, cracked, gray-brown rind mottled with various molds. The paste is semi-hard, unpressed, and orange: it owes its characteristic color to the addition of a natural coloring agent, annatto. Annatto is a natural yellowish-red coloring agent (E160b), a carotenoid extracted from a plant native to the Amazon, Bixa orellana. The intense orange of the annatto pairs well with the moldy green-blue of Penicillium Roqueforti. After salting, the product is aged for at least 12 weeks, but it is worth waiting longer.
