
The cheese Drunken with Amarone della Valpolicella DOCG from La Casara Roncolato contains all the flavor of the Lessini mountains. The cheesemaker wanted to engage with one of the main representatives of Veronese and Italian oenology: Amarone della Valpolicella DOCG. The cheese is made from cow's milk produced using the same technique as Monte Veronese DOP. While still fresh, it is placed in contact with the pomace of the grapes used in appassimento with Amarone DOCG wine. After contact and resting, the cheese is aged from 8 to 19 months. It is a rare delicacy! During the aging in wine, it absorbs a significant amount of product that penetrates centrifugally towards the center. Subsequently, during maturation, the drying of the cheese tends to evolve the flavors while still maintaining the developments of Amarone DOCG. Drunken with Amarone DOCG, a Declaration of Love.
