The cheese is made from cow's milk produced using the same technique as Monte Veronese DOP. Still fresh, it is placed in contact with the pomace of grapes that have been dried with Amarone DOCG wine. After contact and resting, the cheese is aged for 8 to 19 months. It is a rare delicacy! During aging in wine, it absorbs a significant quantity of the product that penetrates centripetally towards the center. Subsequently, during maturation, the drying of the cheese tends to evolve the flavors while still maintaining the evolutions of Amarone DOCG. Drunken with Amarone DOCG, a declaration of love.
