The Venetian Sopressa from Salumificio Pedrazzoli is an aged product made from pure pork of Italian origin, minced and stuffed into a natural casing, then artisanally tied. Its ruby-red colour comes from the lean cuts alternating with the white cubes of lard. When sliced, it is firm with good slice integrity; the uniformity of the finely grained lean parts is interrupted by the presence of lard cubes.
