The first is made with Durella grapes which were once called rabiosa or cagnina precisely for their acidity. Garganega for the Soave is instead a typical native grape of the Veronese area, the most well-known, the most cultivated. With the two wines and their pomace, it is placed to age the cow's milk cheese produced with the same technique as the Monte Veronese DOP. It has a maturation period from 8 to 19 months. The storage in grape pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.
