Garganega for Soave is a typical indigenous grape of the Veronese area, the best known and most cultivated. With the two wines and their pomace, it is used to age the cow's milk cheese produced with the same technique as Monte Veronese DOP. It has a ripening time of 8 to 19 months. The aging in the pomace and in the wines implies an absorption that penetrates centripetally towards the center of the cheese, conferring typical organoleptic characteristics.
