Garganega for Soave is instead a typical native grape of the Verona area, the best-known, the most cultivated. With the two wines and their pomace, it is used to age cow's milk cheese produced with the same technique as Monte Veronese DOP. It has a maturation period of 8 to 19 months. The aging in pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, conferring typical organoleptic characteristics.
