
The Alpine Crudo comes from a piece of loin that is aged and smoked in stone caves in the mountains with typical mountain herbs such as arnica, juniper berries, mother herb, and other rarities found particularly in the Lessini Mountains, which are rich in flowers. The loin is tied up while still fresh and sprinkled with spices and herbs. Subsequently, it is left to smoke naturally from the slow burning of branches and juniper berries. The aging then lasts for 6-8 months. At the end, after a partial trimming, it is packaged.
