What is the difference between sopressa and salami? First of all, the size. Normally, Venetian sopressa is particularly large, around 1 kg. It has a thicker casing and must be aged for longer precisely because of its larger diameter. But beware, there is also a difference between Soppressa and Soprèssa... it is not just a matter of one "p". The latter is only the one from Vicenza. Soprèssa Vicentina is PDO. Everything else is Venetian Soppressa. A cured meat with a particular charm, forming part of the ancient tradition of the stuffed meats of the Venetian and Venetian-lagoon peoples.
