Slice the turkey breasts and pound them with a meat mallet
Coat the slices in beaten egg and then in breadcrumbs
Fry the cutlets in butter, brown them, and salt them at the end of cooking
Arrange them in a buttered baking dish, place a slice of ham on each cutlet, sprinkle with Parmesan, and top with flakes of butter
Bake the cutlets in a very hot oven until the butter has melted and the Parmesan is golden
