Arrange the flour in a well and place the chopped butter, the sugar and the egg yolk in the center (keeping the white aside)

Roll out a dough about 1 cm thick then cut out the canestrelli with a fluted cutter or with flower-shaped cookie cutters
Brush them with egg white and place them on the baking sheet previously lined with parchment paper
Bake at 180°C until golden
When baked, sprinkle them with icing sugar
