Put the chestnuts in cold water with the fennel seeds and salt
Boil them for about 40 minutes and once cooked, shell them, peel them and pass them through a food mill
Put the chestnut purée obtained together with an equivalent amount of sugar in a saucepan, add the vanilla bean and 1 glass of water
Cook for about an hour over low heat, stirring constantly until the desired consistency is obtained
Turn off the heat, remove the vanilla and add the cognac
Put the jam into jars and consume after 1 month
