Christmas recipe
Chop together the giblets, bacon and sausage; add the soaked and squeezed bread crumb, the sliced peeled apples, the prunes softened in warm water, the chestnuts and fill the turkey with it; add a knob of butter rubbed with salt and pepper.
Sew up the opening, wrap it with the bacon slices and cook in the oven with a little butter at 220 degrees for one hour, then at 180 degrees for about another hour and a half.
Baste the turkey from time to time with its juices.
For the last quarter of an hour, remove the bacon and brown the skin.
