Cover the bottom of a baking dish with a layer of coarse salt, place the duck on it well tied with a thin string and cover it completely with coarse salt, pressing well.
Cook in a very hot oven (about 220 degrees) for at least one and a half hours.
When cooking is complete, remove the salt and lift the duck by the string.
Break the crust in front of the guests so they can appreciate all the aroma of the dish and serve it.
