Cut the rabbit into very small pieces, flour the pieces and brown them with oil and butter

Cut the carrots into slices
Arrange the rabbit pieces in the bottom of a baking dish and cover with onions, carrots and their cooking juices
Cover with the chopped raw vegetables and finish with the wine and cognac. Cover the dish with a lid and cook over low heat in the oven for two hours
